Thesis (MScAgric)--Stellenbosch University, 2020.ENGLISH ABSTRACT: This study focused on characterising the variability in a Merlot vineyard after which the effect of aspect and ripeness on the composition of grape skins and seed, as well as wines made from these berries, was investigated. The North-South orientated vineyard rows resulted in the two canopy sides (East and West) being exposed to the sun at different stages during the day. There was a strong indication that this related to variable microclimatic conditions between the two-canopy sides which could in turn affect the metabolic composition of the berries.
