Proteins that do not have a well-defined structure in their functional state are referred to as intrinsically disordered proteins (IDPs). IDPs are ubiquitous in biological cells and their aggregation is involved in many diseases. The extended conformations of IDPs result in a large water interface, yet, interactions between IDPs and water are only scarcely documented. Water has been termed the matrix of life because it is essential for a variety of molecular processes, including protein folding, stability, and activity. The IDP tau regulates microtubule activity in neurons and is known to form amyloid fibers that are one of the hallmarks of Alzheimer disease.
