This article presents data regarding the oenological potential of some table grape varieties cultivated in Viileviticultural area ofBujoruWine Centrefrom Dealu Bujorului vineyard by analysing the evolution of the maturation process. The main purpose of this article is to presentdata regarding the maturation dynamics of six table grape varieties (Victoria, Italia, Chasselasdoré, Muscat of Hamburg, Tamina, Alphonse Lavallée), in the new climatic conditions of the last 5-10 years, as a result of global warming, specifically concerning the raise of the sum of active temperatures during the vegetation period, especially in the grape maturation period.
