Objective about this investigation was to formulate coating edible based of mugilage of nopal, plasticizer and antioxidant to extend the black grapes useful life. The nopal is just used in a fresh way, by appropiate process got a mugilage of nopal with important purity caracteristics and with 4,47 PH. Mugilage added to plasticizer and antioxidant’s mix to make coating edible being the appropiate temperature 90’C/30 minute. During 24 conservation days the parametres analysis physics-chemical determinated the t10 (a2b2) lost a little of quantity humidity with 4.13g average, a little quantity 1.02g of solid total with PH average of 3,65g totals solids solubles 17.5g and the mantains the lowest acidity of 65’D (°Dornic).
