Bu çalışmada Ülkemizdeki gıda sanayinin önemli dallarından biri durumuna gelen balık konservesi endüstrisinde ele alınması gereken ana problemlerden biri durumunda olan ağır metal kontaminasyonu ton konservelerinde kurşun ve kadmiyum bazında ele alınmıştır. Gelişen teknolojik olanaklarla kontaminasyonun en aza inmesi gereken bu gıda kolunda problemin kaynaği hammadde olarak görülmüş ve büyük çoğunluğu kuzey ülkelerinden ithal edilen balıklarda endüstriyel kirlenmeden doğan bulaşma incelemeye alınmıştır.
