Estabilidad de néctar mix de pulpa de naranja (Citrus sinensis) y mandarina (C. reticulata) con goma xanthan y cmc

The objective of the present investigation was to evaluate the stability of a nectar mix of orange pulp (Citrus sinnensis) and mandarin (Citrus reticulata) with xanthan gum and CMC. The factors in studies were two: A: types of stabilizers (xanthan gum and CMC) and B: percentage of orange and mandarin pulp (50/50, 60/40 and 70/30). The experimental design applied was a DCA with a bifactorial arrangement A * B (2x3), resulting in six treatments with three replications for each one of them. 240 mL of nectar mix, consisting of pulp, water, sugar and stabilizer, were used for each experimental unit. The physical-chemical variables were evaluated (acidity, pH, density and stability), for the data analysis the statistical program SPSS version 22 was used. In conclusion, the nectar mix of orange and mandarin showed that the pH variables whose value is lower at 4.5 as indicated by the INEN 2337: 2008 Standard, density (1.064 to 1.069 g / mL) and 0% sedimentation presented the best physical-chemical characteristics in T1, T2 and T3 using xanthan gum.El objetivo de la presente investigación fue evaluar la estabilidad de un néctar mix de pulpa naranja (Citrus sinensis) y mandarina (C. reticulata) con goma xanthan y CMC. Los factores en estudios fueron dos: A: tipos de estabilizantes (goma xanthan y CMC) y B: porcentaje de pulpa de naranja y mandarina (50/50, 60/40 y 70/30). El diseño experimental aplicado fue un DCA con arreglo bifactorial A*B (2 x 3), resultando seis tratamientos con tres réplicas por cada uno de ellos. Para cada unidad experimental se emplearon 240 mL de néctar mix, constituido de pulpa, agua, azúcar y estabilizante. Se evaluaron las variables físico-químicos (acidez, pH, densidad y estabilidad), para el análisis de los datos se utilizó el programa estadístico SPSS versión 22. Como conclusión el néctar mix de naranja y mandarina evidenció que las variables pH cuyo valor son menores a 4,5 como lo indica la Norma INEN 2337:2008, densidad (1,064 a 1,069 g·mL-1) y 0% de sedimentación presentaron las mejores características físico-químicas en los T1, T2 y T3 empleando goma xanthan.
