The production of ready-to-eat bagged salads continues to increase year upon year and the search for a higher quality leaf to harvest, transport, wash, dry and pack with a longer shelf-life is a continuing process. In order to further facilitate the improvement of baby salad leaves, young leaves were studied to diagnose the term ‘processability’ and subsequently manipulate leaf processability in species including Lactuca sativa L. leaf type. The processability of baby salad leaves was defined as the ability to withstand postharvest washing and packaging processes that are involved in the production of ready-to-eat bagged salad.
