Cold storage and the addition of preservatives are ways of preserving fillet products to maintain their quality. The addition of preservatives to fillet products can be in the form of synthetic or natural ingredients. Galangal rhizome contains essential oils that are active as antifungal and antibacterial. This study aimed to know the concentration of essential oils and effective storage time in maintaining the quality of the broiler chicken fillet.
