Diamine oxidase (DAO) is a major enzyme in the breakdown of dietary histamine. Histamine intolerance is caused by an imbalance of histamine scavenging mechanisms, which can be treated with small-histamine diet. The relevance of dietary supplements containing external DAO has lately grown especially that produced from low-cost sources to aid in the intestinal hydrolysis of histamine. As a result, this study aimed to test the sprouted sections of fenugreek and beans for histamine breakdown to determine their availability as nutritional supplements used to get rid of histamine and limit the harm caused by excessive concentrations which can lead to death.
