Dough meal with low glycemic index was produced from sweet potato, soy bean and rice bran composite flours. Effect of the composite flour samples on the glycemic index, as well as proximate and minerals composition of the dough meal were optimised using optimal mixture design of response surface methodology. The dough meal had considerably high protein and fibre contents. The moisture and ash contents were low. The results indicated that the addition of sweet potato enhances the minerals composition, while soybean and rice bran had highest effect on the protein and fibre contents respectively.
