Keliakia-analytiikan yksi tärkeimmistä osista on näytteiden sisältämien vehnän, ohran ja rukiin prolamiinien tehokas uutto ennen niiden pitoisuuden analysointia. Prolamiinien uuttuvuuteen vaikuttaa voimakkaasti elintarvikkeen prosessointi. Lisäksi eri viljalajien sisältämien prolamiinien liukoisuuksien välillä on eroja. Tämän tutkimuksen tarkoituksena oli määrittää olosuhteet, joissa prolamiinit voidaan tehokkaasti uuttaa viljalajista tai elintarvikkeen valmistusprosessista riippumatta. Vehnän, ohran ja rukiin prolamiinit uutettiin eri vahvuisilla etanoli-, 1-propanoli- ja 2-propanoliliuoksilla. Lisäksi tutkittiin lämpötilan ja pelkistimen käytön vaikutusta uuton tehokkuuteen.
