Tutkimuksessa selvitettiin, soveltuuko maitohappofermentaatio kala- ja kanajätteiden säilömismenetelmäksi. Sillin (Clupea harengus) jätteet (sisälmykset ja päät) ja kanajätteet (päät, sisälmykset, höyhenet, jalat ja hylätyt kokonaiset kanat) hienonnettiin, sekoitettiin 5 %:een dekstroosiin ja siirrostettiin neljään erilaiseen 108 cfu/g maitohappobakteeriviljelmään.
