Anthocyanins are a group of flavonoids in purple and red berries, fruits, and tubers. Anthocyanins have been widely reported to have antidiabetic effects, which may arise from the modulation of carbohydrate and lipid metabolism and gut microbiota as well as from antioxidative and inflammatory effects. Anthocyanins can be divided into acylated anthocyanins and nonacylated anthocyanins according to the presence of an acyl group on the sugar residue of the aglycone. Acylation of anthocyanins increases the structural stability of the molecules, which affects their physico-chemical properties, such as a greater capacity to inhibit lipid peroxidation, antioxidant activity, and resistance to digestion compared with their nonacylated counterparts. ...
