This study is based on applying the SCOR model (Supply Chain Operations Reference Model) for the evaluation of the Supply Chain of Small Businesses, bakery segment. The main objective of the study is based on analysis of the company's supply chain processes, seeking an improvement of its operation translated into increased productivity and competitiveness. The work is structured, starting from a literature review on the supply chain, then an approach to performance evaluation, prioritizing the SCOR model, the search target, then unfold to the steps of the model applied to a case study company.
