Goat farming in Brazil has been characterized as an activity of great importance in the socioeconomic market in the Northeast region, because it generates jobs and income. Currently, the goat is presented as an alternative to product diversification and increased profitability of farms. In this context, the production of goat meat has been driven by their appreciation and high demand from consumers, besides the use of non-carcass components, in making dishes like "buchada" and "sarapatel".
