Ingested inorganic nitrate (NO3⁻) has multiple physiological effects in the human body, including vasodilation, lowering blood pressure, inhibiting platelet aggregation and improving skeletal muscle function. Ingested NO3⁻ enters the enterosalivary circulation, resulting in increased NO3⁻ and nitrite (NO2⁻) concentrations in plasma.
