Non-protein nitrates, nitrate nitrogen, and amide nitrogen compounds in thermally processed and untreated rapeseads were investigated. No significant differences were found in the distribution of these compounds in the various anatomic parts of the seeds. The studied compounds remained stable during thermal treatment.
