Triticale starches were y-radiated at the doses from 0.1 to 5.0 kGy to study, comparatively to wheat starch, the effects on reducing value, water solubility, water binding capacity, and rétrogradation. Triticale starches were found to be more resistant to y-radiation than wheat starch. The doses ranging from 0.1 to 2.0 kGy had a little effect on the reducing value of triticale starches with the dose of 5 kGy resulting in a more pronounced effect. Water binding capacity and water solubility increased and the paste viscosity decreased upon y-radiation of triticale starches. The dose of 2 kGy decreased the rétrogradation of Lasco triticale starch, whereas it increased the rétrogradation of Grana wheat starch.Przebadano ważniejsze właściwości s...
