Celem pracy było sprawdzenie przydatności technik GCQ-MS/MS i LC-MS/MS do oznaczania akryloamidu w żywności oraz oznaczenie zawartości akryloamidu w produktach ziemniaczanych, pobranych na terenie całego kraju w latach 2007- 2008. W wyniku przeprowadzonej walidacji stwierdzono, że obydwie stosowane metody charakteryzowały się niską granicą oznaczalności oraz dobrą precyzją i dokładnością. Najwyższą przeciętną zawartość akryloamidu stwierdzono w chipsach ziemniaczanych - 770 µg/kg (113 ÷ 1890 µg/kg), najniższą natomiast frytki smażone pobrane z zakładów gastronomicznych - 401 µg/kg (134 ÷ 679 µg/kg). W roku 2008 oznaczone zawartości akryloamidu w chipsach i frytkach gotowych do spożycia były wyższe w porównaniu z rokiem 2007, jednak różnica ...
