Celem pracy było otrzymanie maślanki wzbogaconej w wapń, magnez i białka serwatkowe za pomocą dodatku wybranych soli wapniowych, magnezowych i koncentratu białek serwatkowych (WPC 68) do mleka przerobowego przed jego repasteryzacją. W pierwszym etapie badań do próbek mleka dodano różne naważki soli wapniowych (mleczan wapnia, cytrynian wapnia), magnezowych (glukonian magnezu, wodoroasparaginian magnezu) i białek serwatkowych (WPC 68) lub ich mieszanek i zbadano ich wpływ na stabilność cieplną mleka przerobowego podczas jego repasteryzacji w temperaturze 74 °C przez 15 s.
