Trwałość produktów spożywczych zależy między innymi od oddziaływań pomiędzy białkami, polisacharydami i wodą. Mogą być one oszacowane na podstawie pomiarów ciśnienia osmotycznego w modelowych układach: rozpuszczalnik – pojedynczy biopolimer lub mieszanina biopolimerów. Wyjściowy materiał badawczy stanowiły wodne roztwory izolatów białek: serwatkowych (WPI) i sojowych (SPI) oraz wodne roztwory polisacharydów: gumy ksantanowej (XG) i inuliny (INU). W toku dalszych badań sporządzono wodne mieszaniny białek i polisacharydów zawierające dwa lub trzy rozpuszczone składniki: WPI/SPI-XG, WPI/SPI-INU i WPI/SPI-XG-INU.
