Celem pracy była ocena zawartości karotenoidów (karotenoidy ogółem, β-karoten, luteina), w bulwach ziemniaka ekologicznego. Ziemniaki uprawiano na glebie lekkiej pola doświadczalnego w Jadwisinie (Mazowsze) w Instytucie Hodowli i Aklimatyzacji Roślin – Państwowym Instytucie Badawczym w latach 2008-2010. Dominującym karotenoidem ziemniaka jest luteina, której zawartość wahała się w zakresie 63-190 μg 100 g-1 świeżej masy. β-karotenu było około pięć razy mniej niż luteiny. Jego zawartość wahała się w zakresie 7-35 μg 100 g-1. Zawartość karotenoidów w bulwach była różnicowana głównie przez genotyp. Najwięcej karotenoidów ogółem zawierała średnio późna odmiana Fianna – 137,7, a najmniej bardzo wczesna odmiana Berber – 98,3 μg 100 g-1 św. m. Bul...
