W artykule scharakteryzowano system zapewniania i zarządzania jakością żywności HACCP, przedstawiono sposób jego wdrażania, omówiono jego zalety, bariery we wprowadzaniu i pułapki w jego projektowaniu. Ukazano również sposób realizacji systemu HA CCP w zakładach przetwórstwa mięsnego.The paper describes principles of Hazard Analysis and Critical Control Points (HACCP), presents its advantages, problems in its implementation and risks during the designing process.
