Lipases are produced by plants, animals and microorganisms, but only those produced by the microorganisms are important to industry due to their various enzymatic properties and substrate specificity. Despite the fact, that such enzymes are synthesized by many species of microorganisms, new environmental strains able to synthesize exocellular lipases are searched for. The aim of conducted research was to assess the lipolytic activity of Proteus mirabilis depending on pH and temperature. The activity was analysed in the pH range between 4-9 and temperatures 5-60ºC.
