The aim of this work was to evaluate the physical properties of oils from winter rape, pumpkin and grape seeds in order to assess their potential as a source of functional oils. Seeds were analysed for water content, protein and fat. All the seeds met minimum requirements for technological quality. The effect of cold oil extraction on chemical compounds was studied in oils pressed from the above seeds. The properties of the oils were compared based on the lipid profiles, content of carotenoids, chlorophylls and tocopherols.
