Emulsions are micro-dispersed systems conventionally stabilized by surface active molecules. Due to their potentially negative impact on the environment, surfactants tend to be replaced by colloidal particles leading to Pickering emulsions. These emulsions are now enjoying a renewed interest, particularly in the field of catalysis. Indeed, the use of particles responding to specific stimuli such as pH or temperature allows to control the type of emulsion or even its destabilization, which can present an undeniable advantage at the end of a reaction.
