The objectives of this study are: Firstly, to determine the exact concentration of banana bract extract as jelly colorant, based on the hedonic test. Secondly, to determine the color stability of jelly which colored with banana bract extract against the light intensity. 25% concentration of banana bract extract is the exact concentration as colorant which has to be applied to jelly, according to the panelist. The natural color of anthocyanin from banana bract in jelly degraded due to the light intensity. Jelly which has treated with light intensity of 780 and 1.850 lux in period of 10 hours are still accepted by the panelist, in contrary the higher light intensity (2.214 and 10.340 lux) cause jelly rejected by the panelist
