The carnivorous rainbow trout (Oncorhynchus mykiss) is considered as a poor user of dietary carbohydrates. Recent studies showed that a high-carbohydrate/low protein diet inducing hepatic global DNA hypomethylation could be involved in the establishment/maintenance of the poor dietary carbohydrates utilisation phenotype in trout, but the detail mechanisms remain unclear.
