The objective of this work is to discuss the role of the protection of geographical indications in the extra virgin olive oil sector, a sector largely commodified at international level but with great potentialities of territorial differentiation. Two case studies are analysed following a value chain approach: Estepa PDO (Spain) and Toscano PGI (Italy) extravirgin olive oils.
