In this work, the growth of the Saccharomyces cerevisiae yeast in molasses (virgin honey), is evaluated in the presence of a variable magnetic field (MF) of high frequency and low intensity. The kinetic parameters, such as the maximum specific speed of growth (μmax), the saturation constant (Ks) and the yield coefficient (Yxs), are evaluated. The tests are carried out in 400 ml fermentation vessels at 25 ºC (77 ºF) with an air flow of 1 vvm, approximately. A magnetic field having a frequency of 100 kHz and a field density of 250 mG is applied during 200 seconds.
