Abstract This article offers a discussion of the cultural importante of food, and the consequent need for historical and anthropological studies of societies affected by development projects. As a contribution to this problem, the author studies the patterns of food consumption of Indian communities, in the specific case of an Ecuadorian village, and seeks to evaluate the possible traditions which underlie them.Résumé Cet article est une réflexion sur l’importance culturelle que revêt la nourriture, et donc sur la nécessité au préalable d’une étude historique et anthropologique des populations concernées par les projets de développement.
