One the mutual effects between wet material and the environment represents the process of drying the result of which is the transfer of moisture from the material to the drying agent. The drying of material such as fruits and medicinal plants known to be thermo susceptible materials, represents a very complex thermo-technical process. The energetic balance of the drying process is quantitatively defined by the thermo-physical properties of the material and the technical parameters of the system.
