The demand for environmentally-friendly, chemical-free products has prompted an increase in the number of hectares cultivated in accordance with the rules of organic agricultural production. The aim of this study was to characterize the physicochemical quality of 10 tomato traditional varieties and one commercial variety using organic growing system.
