Manuscripts of nutrition theses

Includes bibliographical references (pages 42-48)The purpose of this graduate thesis was to publish previously completed research done by former graduate students at California State University, Northridge. Prior to my contribution, this valuable research has been limited to publication solely within their former theses. This is a disadvantage to the University and students, as the data generated is not being used to it???s full potential without becoming available via broader access, such as in scientific journals. In the interest of gaining further exposure of this research and encouraging the development of future studies that expand on the findings, two manuscripts were prepared based on the findings and with discussion within the context of the current literature. The manuscripts were composed according to specific instructions for peer-review as specified by the scientific journals chosen as an ideal platforms for publication
