A new direction for menus in the National School Lunch Program in Los Angeles

Includes bibliographical references (pages 65-66)A non-fast food style of lunch menu was created and\ud tested for school district food service. New recipes for\ud beef stew and peach fruit crunch were developed for the\ud menu using as many government donated commodities as\ud possible. Five school cafeterias prepared and served\ud the special menu which featured beef stew, a whole wheat\ud roll or corn bread, mixed green salad or a fresh half of\ud an apple, peach fruit crunch and milk. Plate waste\ud studies were performed at each school to see how the\ud children accepted the menu. The menu was very well\ud received by both the children and school staff. The new\ud menu had the possibility of being included as an\ud alternate menu for the school district
