Dietary habits of Korean and American college students

Includes bibliographical references (pages 48-53)The dietary habits of Korean and American students were investigated through a questionnaire and a 24-hour dietary recall method.\ud A study of the meal patterns of Korean and American students showed that an average of approximately 60 per cent of them ate three meals every day. When the students ate away from home, over one half of the total students used cafeteria.\ud Among the Korean students, over two-thirds of them did not like American food but they ate American food because of convenience, because it was easy to carry and because they thought that it was nutritious. The Korean students who had resided for a longer period of time in the United States were more familiar with some food items which were not used often in Korea but could be obtained easily in the United States. There was no significant difference between familiarity with those food items and the chronological age at the time of arrival in the United States, or with extracurricular activities with Americans.\ud There was a significantly greater consumption of eggs, fish, rice, noodles, coffee or tea, soft drinks, and desserts by the Korean students and of bread and milk by the American students. There were no significant differences in consumption of cheese, meat, or fruit by ethnic groups.\ud Average 24-hour dietary recalls of the nutrients showed that high intakes of protein and vitamin C were characteristic of all diet. Intakes of most of the nutrients were greater than two-thirds of the RDA except for calcium by all Korean students, iron by American females, and vitamin A by Korean males. The average calcium to phosphorus ratio was .50:l among the Korean students, .73:1 among the American students. These ratio were different from that suggested by the 1:1 ideal ratio
