Esse estudo objetiva investigar os parâmetros físico-químicos e a qualidade microbiológica do leite in natura (tipo C) fornecido pela agricultura familiar no município de Cajazeiras-PB. Para isso, foram analisadas 90 amostras de leite C, obtidas em seis regiões na qual a referida cidade foi subdividida e submetidas à avaliação das características físico-químicas e microbiológicas. Os resultados evidenciaram elevada contaminação microbiana em todas as regiões pesquisadas, ressaltando um padrão entre elas, logo encontra-se fora dos padrões da legislação vigente. Apresentaram-se contaminadas por coliformes, sugerindo a existência de uma relação direta entre os altos índices de Staphylococcus spp. e a presença de Salmonella spp. Desta forma, concluiu-se que o leite tipo C produzido e distribuído pela agricultura familiar na região de Cajazeiras-PB, possui qualidade insatisfatória, exibem diferenças quanto sua constituição físico-química e qualidade microbiológica, composição centesimal deficiente e pode representar risco potencial à saúde de seus consumidores. Sendo necessário que os órgãos fiscalizatórios supervisionem e controlem o comércio formal e informal, em conjunto com a saúde pública através de ações de prevenção de DTA, na atenção primaria através de prevenções, e na atenção secundária com diagnósticos precisos e resolutivos, como também, capacitações e assistência técnica para os responsáveis pelo fornecimento do leite, diminuindo e contribuindo, positivamente, para o beneficiamento a saúde pública.C-type milk has been marketed without the care recommended by current legislation and has been posing serious health risks for the population, mainly through food-borne illnesses, and are linked to deficiencies in the sanitary hygiene control of the product. This study aims to investigate the physicochemical parameters and the microbiological quality of fresh milk (type C) provided by family farming in the municipality of Cajazeiras-PB. For this, 90 samples of C milk, obtained in six regions in which the city was subdivided and submitted to the physical-chemical and microbiological characteristics, were analyzed. The results showed high microbial contamination in all the regions surveyed, emphasizing a pattern among them, and it is therefore outside the standards of the current legislation. They were contaminated by coliforms, suggesting a direct relationship between the high Staphylococcus index and the presence of Salmonella spp. In this way, it was concluded that the type C milk produced and distributed by family farms in the Cajazeiras-PB region has an unsatisfactory quality, exhibits differences in their physical and chemical composition and microbiological quality, deficient centesimal composition and may represent a potential health risk of its consumers. It is necessary that the oversight bodies supervise and control the formal and informal trade, together with public health through actions to prevent ADT, in primary care through preventions, and in secondary care with accurate and resolutive diagnoses, as well as training and technical assistance for those responsible for the supply of milk, thereby reducing and contributing positively to the public health benefit
