Kinetics of cooling and freezing of cashew fruits (Spondias lutea L.)

No. of bitstreams: 1 MICHEL DA SILVA - DISSERTAÇÃO PPGEA 2002..pdf: 9633233 bytes, checksum: 0f0917bdfbfac0c7376960c8286c63b3 (MD5) Previous issue date: 2002-02O presente trabalho teve como objetivo determinar algumas características químicas (pH, sólidos solúveis) e físicas (volume, tamanho, circularidade, esfericidade, massa especifica, calor específico, condutividade térmica e difusividade térmica) do cajá à diferentes temperaturas, bem como estudar a cinética de resfriamento dos frutos de cajá às temperaturas de 5, 10 e 15 °C e a cinética de congelamento dos frutos de cajá às temperaturas de -30, -60 e -90 °C. As curvas de resfriamento foram obtidas em câmaras de resfriamento a uma velocidade do ar de 50 m.min"1 e as curvas de congelamento em um aparelho Kryostat NI80 a uma velocidade do ar de congelamento de 35 m.min"1. Com base nos resultados obtidos pode-se concluir que: a) a circularidade média do cajá é de 69,53%, a esfericidade média de 69,99%, as dimensões médias do diâmetro maior e diâmetro menor do elipsóide são de 39,94 mm e 28,32mm, respectivamente, o raio que equivale a uma esfera de igual volume do objeto é, em media, de 15,86mm; o volume médio é de 16,10 cm e sua consistência média de 2,50 kg.cm" ; b) Quanto às características químicas estudadas do cajá, o pH médio do fruto foi de 2,61 e o seu quantitativo de sólidos solúveis médio, de 14,72°Brix. Referente às propriedades termofisicas e a cinética de resfriamento do cajá conclui-se, também, que: c) a massa específica média para temperaturas acima do ponto de congelamento (5, 10 e 15°C) foi de 0,89 g.cm"3 e o calor específico médio de 0,8402 cal.g'1.*^"1; a difusividade térmica variou de 1,39.10"7m2.s"' a 1,297.10"7m2.s"' e a condutividade térmica de 0,406 a 0,435 W.m" °C" , ambas, em função da diminuição da temperatura de 15 para 5°C; d) o tempo necessário para o cajá ser resfriado às temperaturas de 15,10 e 5°C até uma razão de temperatura 0,1 foi de 22, 40 e 60 minutos, respectivamente. Quanto às conclusões referentes às propriedades termofisicas e a cinética de congelamento do cajá, pode-se dizer que: e) a difusividade térmica durante o congelamento variou de 2,8.10"7m2.s"' a 3,452.10"7m2.s"', na Fase I do congelamento (resfriamento) e de 3,1082.10"7m2.s"1 a 3,2539.10"7m2.s"' na Fase I I I do congelamento (póscongelamento); f) a condutividade térmica durante o congelamento variou de 0,877 W.m^C"1 a 1,0802 W.ní^C"1 , na Fase I do congelamento (resfriamento) e de 0,4608 W.m"loC"' a 0,3575 W.m"loC"' na Fase I I I do congelamento (pós-congelamento); g) o cajá levou 75 minutos para ser congelado (Fase II) à temperatura de -30°C, 44 minutos à temperatura de -60 °C e 40 minutos à temperatura de -90 °C.This present work had the objective to determine some chemical features (pH, soluble solid) and physicals (volume, dimensions, circularity, spfericity, specific mass and specific heat) of the cajá fruit in different temperatures, and to study the kinetics of freezing the caja fruits in the temperature of-30, -60 and -90°C. the curves of cooling were obtained in cooling cameras at 50 m.min"1 speed and the freezing curves in the Kryostat NI80 at the air freezing speed of 35 m.min"1. Based on the results, we can conclude that: a) the average circularity of caja is 69,53%, the average spfericity is 69,99% and the average dimensions of the bigger diameter and the smaller diameter are of 39,94 mm and 28,32 mm, respectively, the spoke that refers to the sphere with the same volume of the object is in average of 15,86 mm; and the average volume is of 16,10 cm"3 and its average consistence is 0,50 kg.cm"2; b) Refering to the chemical features studied from caja, its average pH is of 2,61 and its total soluble solids are of 14,72 °Brix. Talking about its thermophysicals properties and kinetics de cooling we can conclude that; c) The average specific mass for temperatures above the freezing mark (5,10 and 15°C) was of 0,89 g.cm"3 and the average specific heat of 0,8402 cal.g^.X"1; the diffusivity therrnal ranged from 1,39 x IO"7 m2.s"' and the therrnal condutivity from 0,406 to 0,435 W.irfVX"1 both in function of the decreased temperature form 15, 10 to 5°C; d) The necessary time for the caja fruit to be coolled in the temperatures of 15, 10 and 5°C until one rate temperature of 0,1 was de 22,40 and 60 minutes respectively. Talking to the conclusions referring to the thermophysicals and kinetics of freezing of the caja fruit, we can say that: e) The therrnal diffusivity during the freezing from 2,8. IO"7 m2.s_1 to 2,452.10"7 m2.s"!, in the Phase I of the cooling and from 3,1082. IO"7 m2.s"' to 3,2539.10"7 m^s"1 in the Phase III of the freezing (post freezing); f) the therrnal conductivity during the freezing ranged from 0,877 W.m\°C~\ in the Phase I of the freezing (cooling) and from 0,4608 W V .
