O trabalho apresentado neste capítulo avalia o efeito da variação do teor de água na esfericidade, no volume e na porosidade das sementes de cajá, graviola, tamarindo e umbu e ajusta os valores experimentais por diferentes modelos matemáticos. Analisa-se as metodologias para a determinação da esfericidade, volume e porosidade. A esfericidade e o volume foram obtidos por meio da medição dos três eixos ortogonais. A contração volumétrica unitária das sementes foi determinada pela relação entre o volume em cada teor de água e o volume inicial. A porosidade da massa de sementes foi determinada utilizando-se um picnômetro de comparação a ar. Concluiu-se que a variação no teor de água influencia na esfericidade, no volume e na porosidade das sementes de cajá, graviola, tamarindo e umbu. Por análise de regressão foram obtidos modelos matemáticos que representam adequadamente os dados experimentais das propriedades físicas em função do teor de água.The physical properties of seeds are affected by water content. The work presented in this chapter has evaluated the effect of variation of moisture content on sphericity, volume and porosity of the seeds of caja, soursop, tamarind and umbu and adjust the experimental values by different mathematical models. We analyzed the methodologies for the determination of sphericity, volume and porosity. The sphericity and volume were obtained by measuring the three orthogonal axes. The shrinkage of single seeds was determined by the ratio between the volume at each moisture content and initial volume. The porosity of seed mass was determined using an air comparison pycnometer. It was concluded that the variation in moisture content affects the roundness, in the volume and porosity of the seeds of caja, soursop, tamarind and umbu.
