A polpa foi desidratada em estufa nas temperaturas de 50, 60 e 70 °C e o material seco foi triturado para a obtenção das amostras em forma de pó. A desidratação foi descrita por meio de curvas de secagem ajustadas com os modelos de Page, Henderson & Pabis e Henderson. A amostra em pó foi armazenada por um período de 90 dias, à temperatura ambiente, em dois tipos de embalagens, sendo uma de polietileno e a outra do tipo laminada. A polpa in natura foi caracterizada quanto a parâmetros fisico-químicos. Após a elaboração do pó, foi realizada sua caracterização mediante análises físico-químicas e iniciado o armazenamento, repetindo-se as análises em intervalos regulares de 15 dias. O pó foi avaliado quanto ao seu comportamento higroscópico, determinando-se as isotermas de adsorção de umidade nas temperaturas de 10, 20, 30 e 40 °C, com curvas de ajuste de dados elaboradas a partir dos modelos de Peleg, Gab e Smith. As características analisadas na polpa in natura e no produto em pó foram pH, acidez total titulável, umidade, sólidos solúveis totais (°Brix), açúcares redutores, cinzas e cor (parâmetros L*, a*, b*). A caracterização físico-química da polpa in natura resultou em valores médios de 77,25% para umidade; 0,80% para cinzas; 0,98% para açúcares redutores; 0,28% para acidez total titulável; 9,80 °Brix para sólidos solúveis totais; 3,70 para pH; 42,07 para luminosidade (L*); +18,27 para intensidade de vermelho (+a*) e +33,67 para intensidade de amarelo (+b*). O produto em pó apresentou, em relação à polpa in natura, aumento na acidez, no teor de cinzas, nos açúcares redutores e nos sólidos solúveis totais (°Brix). Também foram constatados valores superiores nas intensidades de vermelho e amarelo, e inferiores de luminosidade em relação à polpa in natura. No estudo da estabilidade dos parâmetros fisico-químicos do produto em pó durante o período de armazenamento observou-se, ao final do tempo de estudo, uma melhor estabilidade nas amostras armazenadas em embalagem laminada, sobretudo em relação à umidade. Os modelos de Henderson, Page e Henderson & Pabis se ajustaram bem aos dados experimentais de secagem. Para os ajustes das isotermas a aplicação dos modelos de Peleg e GAB resultou em bons ajustes.This aim of this work was dehydrate the buriti pulp and to evaluate its behavior in storage conditions. The pulp was drying in stove in temperatures of 50, 60 and 70 °C and the dry material was triturated for to obtain the samples in powder forms. The drying curves were fítted with the Page, Henderson & Pabis and Henderson models. The powder was submitted at 90 days stored period, at room temperature, in two packing types, polyethylene and laminated. The in natura pulp was characterized as for physiochemical parameters. The physiochemical characterization of the powder was accomplished in the start of storage, repeating the analyses each 15 days. The hygroscopic behavior of the powder was evaluated, determining the moisture adsorption isotherms in temperatures of 10, 20, 30 and 40 °C, and the curves fítted by the Peleg, GAB and Smith models. The characteristics analysed in the in natura pulp and the powder product were pH, titratable acidity, moisture, total soluble solids (°Brix), reducers sugars, ash and color (L*, a*, b*). The physiochemical characterization of the in natura pulp result in average values of 77.25% for moisture; 0.80% for ashes; 0.98% for reducers sugars; 0.28% for titratable acidity; 9.80 °Brix for total soluble solids; 3.70 for pH; 42.07 for brightness (L*); +18.27 for redness (+a*) and +33.67 for yellowness (+b*). The powder product presented, in relation to the in natura pulp, increase in the acidity, in the ash content, in the reducers sugars and the total soluble solids (°Brix) content. Also increases of the redness and yellowness were verified, and inferiors values of brightness in relation to the in natura pulp. In the study of the stability of the physiochemical characteristics parameters of the powder during the storage period was observed at the end of the time of study, a better stability in the samples stored in laminated packing, above ali in relation to moisture. The Henderson, Page and Henderson & Pabis models were well fítting to the experimental data of drying.
