SUPPORTABILITY AND DEVELOPMENT STRATEGIES FOR THE BOVINE MEAT SECTION -A CASE STUDY IN A SLAUGHTERHOUSE OF SÃO GABRIEL, RS, BRAZIL

This study describes supportability and development strategies for the bovine meat section in relation to the changes in the atmosphere, through a case study applied to the activities of a slaughterhouse in the south area of the state of Rio Grande do Sul, São Gabriel's city, under the main leader's optics. This work was presented through a qualitative and longitudinal research, through a semi-structured interview with the main director of the company, verifying the last 17 years of the company s activities. Starting from the synthesis of the characteristics of the section and of a chronological analysis of the bovine mea section from the period of 1989 to the current days, describing the current slaughterhouse situation, the report and the organization chart of the company since Vanhove's Family arrival to Brazil, from the beginning of their activities to the current days. Nine identified strategies were described during the studied period, following a chronological order. In each item we defined: opportunities, threats, strategies, analyze of the period and the effects obtained by the company with the use of the strategy. This study stands out in autonomy effects in the production with the construction and structure enlargement to buy cattle for slaugter, slaughtering and distributing bovine meat with own resources, construction of a supermarket with butcher shop, and investment in automation as well as economical effects in certain periods with reduction in the production flow and work day. We recommend studies involving family company, and the investigation of strategies used in other companies linked to the bovine meat sectionEste estudo descreve estratégias de sustentabilidade e desenvolvimento para o setor da carne bovina em relação às mudanças no ambiente, através de um estudo de caso aplicado às atividades de um frigorífico na região sul do estado do Rio Grande do Sul, na cidade de São Gabriel, sob a ótica do principal dirigente. Este trabalho foi apresentado por meio de uma pesquisa qualitativa e longitudinal, através de uma entrevista semi estruturada com o principal diretor da empresa verificando os últimos 17 anos de atividades da empresa. Partindo da síntese das características do setor e de uma análise cronológica do setor da carne bovina no período de 1989 até os dias atuais, descrevendo a situação atual do frigorífico, o histórico e o organograma da empresa desde a vinda da Família Vanhove para o Brasil, o início de suas atividades até os dias atuais. Foram descritas nove estratégias identificadas durante o período estudado, seguindo uma ordem cronológica. Em cada item estão definidas as oportunidades, as ameaças, as estratégias, a analise do período e os efeitos obtidos pela empresa com a utilização da estratégia. Destaca-se neste estudo, efeitos de autonomia na produção com a construção e ampliação de estrutura para o abate de bovinos, comprar, abater e distribuir carne bovina com recursos próprios, construção de um supermercado com açougue e investimento em automação assim como efeitos econômicos em determinado período com redução no fluxo de produção e jornada de trabalho. Recomenda-se outros estudos sobre empresa familiar e a investigação das estratégias utilizadas em outras empresas vinculadas ao setor da carne bovin
