O objetivo do presente trabalho foi produzir nanopartículas de amido empregando-se o processo de ultrassonicação e caracterizá-las quanto à sua morfologia, microestrutura e propriedades físico-químicas. Três tipos de amido, com diferentes teores de amilose, o amido de milho (23 ± 1 %), o amido de mandioca (18 ±2) e o amido de inhame (30 ± 3 %) foram submetidos ao processo de ultrassonicação e foram obtidos partículas de tamanhos diferentes para cada tipo de amido: as nanopartículas (NPs) e os corpos de fundo (CFs).
