The dietary pattern of humans in the last century has shifted towards a diet rich in refined sugar, red meat, saturated fat and carbohydrates. The aim of this project is to create a well-balanced menu utilizing a traditional dietary approach focusing on Mediterranean food patterns and its favorable nutrient composition in order to remedy the epidemic of chronic diseases such as heart disease and obesity. To that end, foods, food components and food characteristics from the Mediterranean regions were identified through a review of current body of scientific literature supporting the notion that high fiber diets are important in prevention and management of the aforementioned diseases.
