The objective of this work was to analyze the extracellular inulinase production by the fungus Purpureocillium lilacinum in modified Mathur’s medium supplemented with different carbohydrates and commercial inulin as a carbon source, at different pH's and nitrogen sources, determining the reducing sugars of the hydrolysate by the Nelson method modified by Somogy, using as substrate commercial inulin at 1.0% (w/v) in 50 mM acetate buffer pH= 5.0.
