During the second half of the twentieth century, the question of food safety was addressed in two successive stages, based at first on obligations and bans, then on risk analysis and control of sensitive issues. Each played a positive role. The introduction of the “food safety objectives” (FSO) concept now opens a new stage. In addition to the existing methods, it includes in a statistical system the microbiological data and all the processes implemented by the industry all the way up to the consumer. It reconciles the causes of incidents, increasingly complex, with professional and individual responsibility, as well as the end-user’s own responsibility.
