In sugar processing, one of the main quality criteria is the low coloring of sugar crystals. It turns out that colorants from high molar masses adhere more easily to crystals. The use of crossflow filtration is therefore interesting to eliminate these colorants. Since the characterization of the process is insufficient, we have developed a steric exclusion chromatography method (S.E.C.) to evaluate membrane retention. The follow-up of colorant formation in a reactor, as well as statistical calculations (PCR and Ward’s method) on their UV spectra, show that HADP compounds are most likely to form in sugar factories.
