Cellulase is one of the most important enzymes that catalyse the decomposition of cellulose. It has many commercial applications in food industry, including the improvement texture and quality of bakery products, viscosity of fruit puree. Moreover conversion of lignocellulosic biomass into fermentable sugars by cellulase is one of the possible way to produce high yields of bioethanol.
