Integrated photonic micro-resonators have numerous applications in the range of detection and fine metrology. The works presented in this thesis aim at studying and list their use for the diagnosis and the tracking of dynamic soft matter processes such as measurements of sedimentation speed, detections of phase transitions related to products from galenic pharmacology, food industry, cosmetics… The theoretical and mathematical minimum description related to the operating principle of microresonators is presented.
