Bacteria grouped in biofilms are generally more resistant to different environmental conditions. The permanence and behavior of a microorganism in a food are determined by intrinsic and extrinsic factors related to food, which can also influence biofilm formation. In addition, S. aureus isolates may be resistant to antibiotics, including methicillin. The objective of the present study was to characterize phenotypically isolates of S. aureus from bovine raw milk and from different points of the swine slaughterhouse flowchart in order to evaluate the capacity of biofilm formation and factors that may influence this ability, bacterial behavior in the food environment and its antimicrobial susceptibility to methicillin.
