Histamin gibi bazı biyojen aminler çeşitli gıdalarda bulunurlar. Biyojen aminlerin yüksek derişimleri doğrudan veya dolaylı toksik etkiye sebep olabilmektedir. Bu nedenle eser miktardaki histamin tayini önemlidir. Bu çalışmada Kare Dalga Sıyırma Voltametrisi (KDSV) ve Dönüşümlü Voltametri (DV) yöntemleri kullanılarak histaminin elektrokimyasal davranışı çalışılmıştır.
